For the Filling

  • ½ cup cabbage (finely grated)

  • ½ cup carrots (grated)

  • ½ cup paneer or tofu (crumbled, optional for extra richness)

  • 1 small onion (finely chopped)

  • 2 garlic cloves (minced)

  • ½ tsp black pepper powder

  • ½ tsp soy sauce

  • ½ tsp salt

  • ½ tsp red chili flakes (adjust to taste)

  • 1 tsp oil

For the Tandoori Marinade

  • ¼ cup thick curd (yogurt)

  • 1 tsp ginger-garlic paste

  • 1 tsp red chili powder (adjust to spice preference)

  • ½ tsp turmeric powder

  • ½ tsp garam masala

  • ½ tsp chaat masala (optional, for tanginess)

  • 1 tbsp lemon juice

  • 1 tbsp mustard oil or butter (for a smoky flavor)

Instructions

Step 1: Prepare the Dough

  1. In a bowl, mix all-purpose flour, salt, and oil.

  2. Add water gradually and knead into a soft, smooth dough.

Step 2: Prepare the Filling

  1. Heat 1 tsp oil in a pan, add garlic and onions, and sauté until translucent.

  2. Add grated cabbage, carrots, and crumbled paneer/tofu. Stir-fry for 2 minutes.

  3. Season with black pepper, red chili flakes, salt, and soy sauce.
