Ingredients (Makes 12-15 pieces)

  • 1 cup almonds (whole or chopped)

  • ¾ cup jaggery (gud, finely chopped or grated)

  • 1 tbsp ghee (for extra flavor & smooth texture)

  • ¼ tsp cardamom powder (optional, for aroma)

  • ½ tsp sesame seeds (optional, for crunch & nutrition)

  • ½ tsp lemon juice (optional, prevents crystallization)

Instructions

Step 1: Roast the Almonds

  1. Heat a pan and dry roast almonds on low-medium flame for 3-4 minutes until slightly golden.

  2. Let them cool and chop roughly (or keep them whole for chunky chikki).

Step 2: Prepare Jaggery Syrup

  1. In the same pan, add ghee and jaggery.

  2. Cook on low flame, stirring continuously, until it melts and turns glossy.

  3. To check consistency, drop a little syrup in cold water—if it hardens immediately, it's ready.

  4. Add lemon juice and cardamom powder, then mix well.

Step 3: Mix & Set the Chikki

  1. Quickly add roasted almonds and sesame seeds, stirring well to coat evenly.

  2. Transfer to a greased plate or parchment paper and spread evenly.

  3. Flatten with a rolling pin while still warm.

  4. Let it cool for 10-15 minutes, then cut into squares or bars.

Tips for Perfect Almond Chikki
